Also known as the washed process, this method involves removing the outer fruit layers before drying the beans. The cherries are pulped to separate the beans, which are then fermented to remove mucilage. The beans are washed and dried. This method typically produces cleaner, brighter flavors and more consistent quality.

 

Milling

Once dried, the coffee beans undergo milling, which involves removing the parchment layer (for wet-processed coffee) and grading the beans based on size, weight, and quality. Milling also includes sorting and sometimes polishing the beans to enhance their appearance and uniformity.

 

Exporting and Roasting

After milling, green coffee beans are prepared for export. They are packaged and shipped to roasters around the world. The roasting process is crucial in developing the flavor profile of the coffee. Roasters heat the beans to specific temperatures, causing chemical reactions that create the rich flavors and aromas associated with coffee.

Roasting levels can vary from light to dark, influencing the final taste of the coffee. Light roasts retain more of the bean’s original flavors, while darker roasts develop more intense, caramelized notes.

 

Grinding and Brewing

Once roasted, coffee beans are ground to the desired coarseness, depending on the brewing method. The grind size impacts the extraction process and, consequently, the flavor of the coffee. For example, espresso requires a fine grind, while French press coffee needs a coarser grind.

Finally, the ground coffee is brewed. Various methods such as drip brewing, French press, pour-over, and espresso machines can be used, each contributing different nuances to the final cup. The brewing time, temperature, and method all affect the flavor and strength of the coffee.
